Lobster is one of those seafoods that you don’t prepare very often, but when you do, it’s definitely for something special. So in this video I will teach you how to prepare lobster with lemon butter sauce at home.

INGREDIENTS FOR 2:

1 big freshlobster
150 gr butter
1 lemon
100 ml white wine
1/4 onion
2 garlic cloves
10 gr parsley
10 gr parmesan cheese
10 gr marjoram
10 gr paprika powder
20gr dijon mustard (optional)
a dash of chilli sliced or chilli powder
1 pinch of salt

PREPARATION:

First of all purchase live lobster the day you intend to cook it. Before you begin cooking any live lobster, please put it in the freezer or ice water bath for 20 minutes in this way lobster will be put to sleep, which is more humane way of treating him.
Meanwhile, place a large pot of salted water on the stovetop & bring to the boil. Remove the lobster from the iced water/freezer & put it into a boiling water. Blanch it for 5 minutes. After remove from the water & allow to cool naturally. With a sharp knife cut the lobster in half. Use the back of a knife/scissors to crack the claws and remove the meat. Warm 1 cube of butter in a saucepan & add the chopped onion & chopped garlic & sweat with a pinch of salt until semi transparent then add the white wine & reduce on half. Add the rest of the ingredients & then add the butter cut in cubes one by one & wisk well until tick & creamy consistency. Preheat the oven to 200°C. Place the lobster in a baking tray add 1-2 spoons of sauce on top and bake in the oven for 8-10 minutes. After removing from the oven plate the lobster in the plates add 2 spoons of the sauce on top of each half & sprinkle with black pepper and serve immediately.

NOTE:

For blanching: for every 1 Ltr of water add 30 gr of salt.
Don’t throw away the shells as they can be used to make delicious stock.
